The Open Course Collection Single Malt uses a combination of whiskey from our unique straight-neck pot still and more traditional swan neck stills, aged in organic American Oak casks. Distilled in our remarkable stills using predominantly unpeated organic barley with a small amount of peated organic barley, and taken at a range of collection strengths to create a complex whisky that showcases our capability in distilling and the impact on flavor. The influence of organic wine hogsheads in maturation intensifies the orchard fruit notes resulting in a whisky that has notes of tropical fruit, pineapple, mango, grapefruit and vanilla with a hint of toasted oak, ginger, and cinnamon on the finish.
