Amatitena Blanco Origen Tequila
The process starts with the cooking in a stone oven with a slow and direct mesquite wood fire, that preserves the soft and sweet flavors of the agave. It continues with the extraction of juices and honeys from the agave in the milling process using a tahona, where the juice is gently extracted without stressing the agave fiber. Fermentation is done in natural stages, where wild yeasts are in charge of transforming the agave honeys into alcohol. Distillation is done in original copper stills and geometry pots, slowly and directly over low heat, achieving an exquisite distillation.
